Several extraction processes used in the food industry includes solvent extraction, supercritical fluid extraction (carbon dioxide extraction), enzymatic extraction, steam distillation and microwave-assisted extraction.

The process of fermentation is also used to modify and preserve food products. Fermentation is the conversion of carbohydrates into alcohols or acids by microorganisms or enzymes. It can be used to produce various types of foods, such as bread, cheese, yogurt and beer. Fermentation produces desirable flavor compounds as well as providing food with a longer shelf-life.

Food production and processing also involves adding various chemical compounds to enhance the flavor, texture and shelf-life of food products. For example, sodium nitrate is used as a preservative in cured meats such as bacon, and emulsifiers are added to food items such as mayonnaise and salad dressings to stabilize the mixture of oil and water.

2. Nutrition, Food Safety, and Chemistry

Nutrition plays a key role in the chemistry of food. Nutrient analysis involves the identification and quantification of the various components of foods including proteins, carbohydrates, fats, vitamins and minerals. These components are necessary for the normal function of the human body.

Food safety is also related to food chemistry. Food safety involves ensuring that food is free from harmful contaminants, such as hazardous chemicals, bacteria, viruses and parasites. The chemistry of food safety involves monitoring the levels of chemical contaminants, such as heavy metals, in the food supply. It also involves ensuring that food products are stored under proper conditions to prevent the growth of microorganisms.

Freezing and heat treatments are used to kill microorganisms and slow down the rate of food spoilage. For example, freezing foods at very low temperatures is used to preserve nutrients and prevent the growth of microorganisms. Heat treatments, such as pasteurization, are used to kill harmful microorganisms and extend the shelf-life of foods.

4. The Chemistry of Food Enhancers

Food enhancers are added to processed foods to improve their flavor and texture. Food enhancers are usually derived from natural sources, such as herbs and spices, or produced synthetically in the laboratory. Commonly used food enhancers include monosodium glutamate (MSG), artificial sweeteners, emulsifiers and flavorings.

Monosodium glutamate (MSG) is a flavor enhancer commonly used in Asian foods. It is produced by fermenting sugar cane and other carbohydrates with beneficial bacteria. MSG gives food a savory flavor, and is often used in place of salt.

Artificial sweeteners are chemicals that are used to sweeten food without adding calories. Commonly used artificial sweeteners include sucralose, aspartame and saccharin.

Emulsifiers are compounds used to stabilize mixtures of oil and water. Commonly used emulsifiers include lecithin, polysorbate, and monoglycerides.
